With Christmas just weeks away, how about making a few small changes to your normal Christmas Dinner?
Posh Sprouts with Bacon & Almonds
10 rashers of smoked streaky bacon
300g peeled almonds
100g caster sugar
1 cup of water
1 tablespoon of cinnamon
Blanche the sprouts in boiling, salted water for 6 minutes. Once cooked, refresh in iced cold water and set aside.
Put the almonds on the grease proofed baking tray. Dust the sugar and cinnamon over them, add the water and mix so the nuts are coated in a sugar paste.
Put in the oven on 150 degrees centigrade for 15 minutes, turning the nuts every 5 minutes.
The sugar and water will crystalize on each individual nut.
Once cool, roughly chop
Slice the streaky bacon and fry on a medium heat until crisp
Peel the individual layers of the sprouts leaving you with the leaves
Add 100g of butter to the bacon then add the sprout leaves and almonds, coating it all in the butter
Season with a twist of black pepper and serve
