Raymond Blanc with Sheila Dillon: Paying the price – Why under valuing food may cost us the earth
11:00-12:00, Saturday 19 at Borough Theatre
Does the phrase ‘waste not, want not’ resonate with you? Well the sound of his mother’s voice saying those words still rings in Raymond Blanc OBE’s ears. In a conversation with BBC’s Sheila Dillon, Raymond, President of the Sustainable Restaurant Association will explore the roots of his passion for produce, dread of waste and respect for the land. He will reveal how those early lessons learned from Maman Blanc have guided him throughout his career as chef and restaurateur – and how only by understanding that food connects with every part of our lives, can we truly secure a future for our food.
Raymond Blanc OBE is a passionate campaigner for sustainability and food ethics and has been President of the Sustainable Restaurant Association since 2012. He is chef patron of the two Michelin starred Belmond Le Manoir aux Quat’Saisons and founder of Brasserie Blanc.
